Crunchy Apple Salad



I have to limit my soy intake, so I decided to make my own mayo.  It snowed the day I wanted to make it, rendering my body stiff and tired.  So I tried a little olive oil instead.  I liked it so much I stuck with it.

    I love walnuts too and have a nice salad recipe posted at the moment starring broccoli and walnuts – great for a party. I like your suggestion for an olive oil dressing instead of mayo!

      Thanks! I will definitely check out your recipe. Walnuts have the good omega oils, like fish, only they taste better.
      I try often eat nuts instead of potato chips for a snack. I give myself a few chips as a reward for picking up the nuts first!
